The “Divertimento” is composed of a selection of Tuscan native grapes from different vineyards as Colorino, Canaiolo and Mammolo. The grapes have been harvested by hand in baskets.

Dievole viticulture dates back to the 11th century. The first step taken to cultivate this genetic legacy was to revisit the past found in the historical memory of the farming families.

Ageing
In stainless steel barrels for about 10 months. The bottle ageing is for about 3 months.

Vinification
The pre-maceration is made in stainless steel barrels for 3 days at 5°. The maceration continue at 25°. Draining off after 7 days. The malo lactic fermentation occurs spontaneously.
